
Stuffed Mushrooms

Ingredients:
20 fresh mushrooms
Ingredients for mixture (optional: double mixture recipe for extra filled mushrooms)
3 Tbsp. butter
2 Tbsp. finely chopped onions
2 Tbsp. finely chopped red peppers (you can mix in green bell peppers also if you’d like)
15 crushed Ritz Crackers
2 Tbsp. Parmesan Grated Cheese
1/2 tsp. dried Italian seasoning

Directions:
Heat oven to 400
Remove stems from mushrooms
Chop enough stems to measure 1/4 cup
Melt butter in small skillet on medium heat
Add chopped stems, onions and peppers to skillet. Cook and stir 5 min. or until tender
Stir in cracker crumbs, cheese and seasoning
Spoon mixture into mushrooms
Place on baking sheet
Bake 15 min
